Not many may be familiar with the soft and fluffy kallupittu which looks like appam and feels like a dosa. However, those who have tried it at the misty hills of Wayanad vouch for its melt in the mouth texture and amazing taste.
Kallupittu is an authentic dish of the Adivasi people settled in Ambalavayal. The unique vessel in which the kallupittu is cooked is at least a century old. This old vessel plays a pivotal role in giving kallupittu its unique taste and texture. The vessel is made in mud, but it looks as if it is a dosa pan that is cast in iron, as the vessel has been in use for ages.
Kallupittu is made using a batter of raw rice. However, the batter isn’t kept to rise like the one that is made to cook dosa. Fresh butter is added when the kallupittu is almost done. The butter makes the kallupittu extra soft. Kallupittu tastes amazing with special roast chicken.
In Adivasi settlements, the food is prepared in a special makeshift stove outside their houses. A special marinade of birds eye chilli paste is added to prepare the roast chicken. You could reach Amabalavayal via the tribal tourism circuit to enjoy the unique taste of this roast chicken.
