Santhosh shared one of his special dates-dal vada recipe for the readers of Onmanorama.

Santhosh, a native of Thalayolaparambu, has entered the India Books of Records by cooking maximum number of dishes in minimum time. He achieved this amazing fete by dishing out 33 delicious dishes including biryani, sambar, chicken curry, payasam (dessert), fish fry, thoran (stir fry) and many other Chinese and continental varieties in less than 33 minutes.

With an incredible experience of around 30 years in the culinary art, Santhosh has cooked before a group of specially invited guests. He used 11 gas burners, ovens, cookers, and blenders to seamlessly cook and plate 33 amazing dishes. His niece Seem Dinesh, too, had joined him at the cooking station to assist. Santhosh tries to bring in his unique style while cooking any dish. He is all set to take his cookery skills to the next level and aims to get into the Guinness Book of World Records.

Ingredients
250 gm yellow lentils
150 gm dates
A piece of ginger
50 gm shallots
A pinch of salt
50 gm raisins (crushed)
50 gm cashews
30 gm cherries (chopped)
2 cardamom pods (crushed)
1 tsp cumin powder
A bunch of curry leaves
1 cup coconut milk
½ tsp pepper corns (crushed)
A pinch of turmeric powder
300 ml coconut oil
1 tsp sugar

Preparation
Soak the yellow lentils in coconut milk and grind it into a fine paste
Wash the dates and remove the pits
Add these dates into a blender and crush well
Into the yellow dal mixture, add the crushed dates, chopped ginger, shallots, raisins, cashews, cherries, cardamom, cumin powder, curry leaves, black pepper, turmeric powder, salt and sugar
Mix well until it has the right consistency
Scoop some vada batter and shape it into the shape of dal vada in your palms
Heat coconut oil in a non stick pan
Add the dates-dal vada and fry until crisp and golden brown.
