Knead it, roll it, cook it. Do you think that making soft and tasty chappatis are as simple as that? Well, evidently, not! It seems the fresh handmade chappatis that have always made it to the 'favourite food list' of many food lovers, are facing major extinction threats in hotels, as the new generation chappatis, made with the help of the chappati making machines have already found their secure place in the kitchens of the hotels. While the paucity of workers and the ever increasing demand for them have paved the way for the entry of machine-made chappatis, there are only a handful of hotels that opt for handmade ones at the moment. Apparently, there are two types of machines available in the market; the first one is a fully automatic machine that does its entire job alone, including that of kneading the dough, rolling and cooking. You have to pay about 4-5 lakhs for this wonderful time-saving machine. The latter is a semi automatic machine, which should be supervised by at least two workers. In fact, they are separate machines designed for specified jobs. When flour, oil and warm water are added in the required proportion into the first machine, it will complete the process of kneading within about fifteen minutes. After keeping it aside for about thirty minutes, the dough prepared by the first machine could be put in to the second machine for the purpose of rolling. Cooking the chappatis at the end is the only manual job one has to do, if you resort to these machines. It is a real time-saver, as about 220-250 chappatis could be prepared following this method within an hour. These chappatis appear to be bigger but in reality they are as light as a thin paper. Needless to say, the machine made ones cannot compete with the handmade Chapatis when it comes to flavour. But hotel owners say that they have some secret tips, used in each stage of chappati making that can create magic where machine made chappatis are concerned as well.
